Okara Cookies
8 Portions | 25 minutesOkara is the left over soy bean pulp from the tofu making process. It can be used in a variety of ways, one being for cookie dough!
Ingredients
- 250 g Okara
- 150 g Wholemeal flour (spelt or wheat)
- 80 g Sugar
- 50 g Dark chocolate, chopped to chips
- 5 g Baking Soda
- 30 ml Maple Syrup
- 5 g Cinnamon
- 2 g Salt
- 5 g Vanilla Sugar
Preheat oven to 200°C. Mix all ingredients in a large bowl and knead them to a homogenous dough.
Split the dough in eight portions and form them to small balls.
Put the balls on a baking tin lined with a baking mat and press them flat into a cookie shape.
Bake for ~15 minutes until the cookies turn brown.
